Confessions of  a Disaster,



Let me start off by saying that I am not a cook, Im the complete opposite whatever that may be, but I decided that this may be the year that all changes. I am a vegetarian so I am always looking for new recipes to tickle my taste buds. I came across this recipe on a food blog, and tweaked it to make it vegetarian friendly. Now everyone usually post blogs that high lite the success and praises that they received on their dish, but this is not one of those times. Check out the recipe and my confession of a self created disaster.

Curried Cauliflower Recipe:

  • 2 heads of Cauliflower (8 Cups)
  • 1-2 tablespoons of Vegetable oil
  • Salt
  • 1 tablespoon chopped butter
  • 1 onion sloced 1 inch thick
  • 2 teaspoons or more of curry powder
  • 4 cups water
  • 2 cups vegetable broth ( low sodium)
  • Salt and pepper to taste
  • 2 tablespoon parsely
Directions:

Preheat oven to 450 degrees, on a foil lined baking pan, toss cauliflower with vegetable oil, and 1teaspoon of salt. Spread out, and roast until the florets turn brown. ( approx 25 minutes)
In a medium sauce pan, melt butter over medium heat. Add onions, and cook until soft about 5 minutes. Stir in curry powder, cauliflower, water, and broth, and cover, bring to a boil. Uncover, lower heat, and simmer 5 minutes.

Using a slotted spoon, transfer 4 cups of cauliflower to a bowl and set aside. Put remaining florets into a blender or food processor add 1 teaspoon salt and process til smooth. Stir puree into sauce pan and reheat if necessary.

Give the recipe a try and let me know if you have better results. I actually liked the soup, but hey I'm my own biggest fan, lol. Remember I'm no Paula Dean, Im not a cook my motto is " If I cant microwave it or order it I won't eat it" heck if you have any tips on how to improve it let me know. I encourage you to try any food combination, if you dont like it don't eat it, but some of the greatest recipes were the result of mistakes.

My aunt who is an A-M-A-Z-I-N-G cook said (and I quote " It wasnt yuck, but I didnt like the cinnamon, could have used more curry) Now I know your wondering why the cinnamon was not listed in the ingredients section and thats because I was channeling my inner chef and being creative. FAILED!
