banana, blueberry, avocado ‘ice cream’(via veganfeast)
i had half an avocado left after making two quesadillas today (yes, i had one for lunch AND dinner because it was just that good !!)… but whenever i leave my avocado overnight in the fridge, its always brown the next day! despite putting it in my “avocado keeper” container and putting lemon juice on it.
so i’ve seen a ton of recipes for ice cream recipes that use avocado, so i figured i’d try it out. i don’t have an ice cream maker, so i just blended it up in my vitamix, and even though it doesn’t look beautiful, it was DELICIOUS!
then i topped it with:
- 1/2 avocado
- 1/2 banana
- 1/2 cup frozen blueberries
- 3/8 cup almond milk
- 1/2 tbs maple syrup
- a little bit of cinnamon (i love cinnamon, i seriously put it in everything!)
- and 5 large ice cubes
1 tsp enjoy life vegan chocolate chips
it makes SUCH a huge portion and is so delicious!
- 1 tsp raisins
- 1/2 banana
